Het echte probleem met brood. Het zit hem niet in de gluten
Je kunt nu bijna overal glutenvrije producten
kopen van koekjes tot bagels. Het lijkt een opmerkelijke nationale
obsessie tegen de tarwe-eiwitten die brood hun elasticiteit sinds
ongeveer tien jaar geven. Artsen zijn al lang bekend met de relatief
zeldzame aandoening die coeliakie heet, een ziekte waarbij gluten de
dunne darm schaden. Maar in de afgelopen jaren, hebben bestsellers
in de V.S. met de titel “Wheat Belly” en Grain Brainhave” het begrip
onder de aandacht van een groot publiek gebracht dat gluten de
verborgen beklaagde achter een schare van gezondheidsproblemen
moeilijk te diagnosticeren ziektes is.
Brood, daar zit wat in! roept het Voorlichtingsbureau Brood te Wageningen al sinds
jaar en dag. Ook het Voedingscentrum te Den Haag beweert dit, en zegt bovendien ook nog
eens over zichzelf dat ze eerlijk over eten is. Laten we zelf eens op
onderzoek uitgaan en nagaan wat er precies in brood zit en hoe eerlijk onze overheid
daarover is. Wanneer de mensheid dit door gaat krijgen, dan breekt de
hel los en begint -zo voorzie ik nu- een grote ommekeer. Wij geven graag
het woord aan Dr. Johan Oldenkamp.
Blijkt dat de term 'vers' niet altijd 'vers
gebakken' betekent. Soms is het dagen of weken ervoor als gebakken en in bevroren toestand
opgestuurd. De bakkerij van de supermarkt 'warmt' het brood dan op.
Het enige brood waar we werkelijk gezonder
van worden is volkorenbrood van (witte) roggebloem, afkomstig van het binnenste, witte
deel van roggezaad. Dat brood verbetert juist het gehalte insuline en bloedsuiker.
From an evolutionary perspective,
humanitys adoption of agriculture,
and hence cereal grain consumption, is a relatively recent phenomenon. Table 3 shows that
this event occurred in most parts of the world between 5,500 and 10,000 years ago. Cereal
grains represent a biologically novel food for mankind [341, 342], consequently there is
considerable genetic discordance between this staple food, and the foods to which our
species is genetically adapted. Cereal grains lack a number of nutrients which are
essential for human health and well-being; additionally they contain numerous vitamins and
minerals with low biological availability. Furthermore, the inability of humans to
physiologically overcome cereal grain antinutrients (phytates, alkylresorcinols, protease
inhibitors, lectins, etc.) is indicative of the evolutionary novelty of this food for our
species.
This genetic maladaptation between human
nutrient requirements and those nutrients found in cereal grains manifests itself as
vitamin and mineral deficiencies and other nutritionally related disorders, particularly
when cereal grains are consumed in excessive quantity. More disturbing is the ability of
cereal grain proteins (protease inhibitors, lectins, opioids and storage peptides) to
interact with and alter human physiology. These interactions likely occur because of
physiological similarities (resultant from phylogenetic commonalities) shared between
humans and many herbivores which have traditionally preyed upon the gramineae family. The
secondary compounds (antinutrients) occurring in cereal grains (gramineae family), were
shaped by eons of selective pressure and were designed to prevent predation from
traditional predators (insects, birds and ungulates) of this family of plants. Because
primates and hominids evolved in the tropical forest,wherein dicotyledonous plants
prevailed, the human physiology has virtually no evolutionary experience with
monocotyledonous cereal grains, and hence very little adaptive response to a food group
which now represents the staple food for many of the worlds peoples.
Cereal grains obviously can be included in
moderate amounts in the diets
of most people without any noticeable, deleterious health effects, and herein lies their
strength. When combined with a variety of both animal- and plantbased foods, they provide
a cheap and plentiful caloric source, capable of sustaining and promoting human life. The
ecologic, energetic efficiency wrought by the widespread cultivation and domestication of
cereal grains allowed for the dramatic expansion of worldwide human populations, which in
turn, ultimately led to humanitys enormous cultural and technological
accomplishments. The downside of cereal grain consumption is their ability to disrupt
health and well being in virtually all people when consumed in excessive quantity. This
information has only been empirically known since the discovery of vitamins, minerals and
certain antinutrients in the early part of this century. The realization that cereal grain
peptides interact with and induce change in human physiology and therefore elicit disease
and dysfunction is even newer and dates to the early 1950s with the discovery of wheat
gluten as the causative agent in celiac disease. In the past 10 years has come the
evidence (admittedly incomplete) that certain cereal peptides may interact with the immune
system to elicit a variety of autoimmune-related diseases.
Lectin is a type of 'wheat germ agglutinin'
(WGA) and glycoprotein. Through thousands of years of selectively breeding wheat for
increasingly larger quantities of protein, the concentration of WGA lectin has increased
proportionately.
Zelf ben ik al 1,5 jaar van het brood af,
een paar keer weer geprobeerd maar krijg gelijk klachten terug, voor mij geen
tarwe/gerst/rogge meer. Alternatieven zijn amandelmeel/boekweitmeel/kokosmeel. Ga niet
gelijk voor glutenvrij meel zoals maismeel/rijstmeel etc vanwege hoge GI waardes. Een
boekweitbroodje, zelf gebakken is heerlijk! En boekweit is ook nog eens erg gezond.
Mijn aanpassingen:
1 zakje bakpoeder (15 gram) --> (kijk ook eens voor wijnsteenpoeder ipv gist)
10 gram zout --> (helft is ook meer als genoeg, ga voor zeezout)
3 eetlepels olie of vloeibare margarine --> (pak kokosolie / roomboter of ghee)
Extra ijzer in ontbijtgranen is niet
schadelijk, maar ook niet nuttig
Prof.dr. Wim van Dokkum heeft sterke
twijfels over het nut van ijzertoevoeging aan bijvoorbeeld ontbijtgranen. Onlangs was er
veel ophef over toegevoegd ijzer in cornflakes, naar aanleiding van twee uitzendingen van
de Keuringsdienst van Waarde. In het decembernummer van Nieuws voor diëtisten stelt hij
veel meer heil te zien in het stimuleren van de opname van ijzer. En dat kan al met kleine
aanpassingen in de voeding. Er zijn groepen die moeite hebben om voldoende ijzer binnen te
krijgen, zoals jonge kinderen, zwangere vrouwen en vrouwen in de vruchtbare leeftijd. Dat
stelt prof.dr. Wim van Dokkum, expert op het gebied van de biologische beschikbaarheid van
mineralen en spoorelementen en adviseur van TNO Kwaliteit van Leven.
Bruin brood
Bij een krappe ijzerinname kan een kleine switch in de voeding al heel wat verbeteren.
Diëtisten kunnen hierin goed adviseren. Van Dokkum: `Door vaker producten met haemijzer
te adviseren, vlees dus, en zorgen dat er vitamine C bij elke maaltijd aanwezig is. Daarna
richt je je pijlen op de stoffen die de opname van ijzer remmen.' Een van de belangrijkste
is fytaat uit volkoren brood. Van Dokkum: `Ik adviseer mensen vaak om bruin brood te eten,
omdat daar de helft minder fytaat in zit, iets minder ijzer en toch nog een behoorlijke
hoeveelheid vezel.' Andere remmers zijn polyfenolen uit koffie, thee en wijn en calcium
uit zuivel.
Supplement
Als dit onvoldoende effect heeft, is volgens Van Dokkum een laag gedoseerd
multivitaminesupplement op zijn plaats. `De hooggedoseerde supplementen die zich richten
op één enkele voedingsstof, zoals zinktabletten, kopertabletten en staalpillen zijn
potentieel gevaarlijk. Overdosering en verstoring van de mineralenbalans ligt op de loer',
aldus Van Dokkum.
Fytinezuur in brood en
dierenvoeding
Na de oorlog toen de industrialisatie in
West-Europa op volle toeren kwam, werd de hamermolen geboren. De mensen noemden het ook
vuurmolen. Misschien vermoeden de mensen toen in de jaren 1950-60 reeds dat het niet goed
was bloem of meel te malen met een hamermolen. Dat meel was veel te scherp en ging ook
onder als je het in water doet zegden de boerinnen en de varkens aten het niet graag.
Heden anno 2009 is wel geweten dat het niet goed is meel te malen in een hamermolen, omdat
het enzym fytase gedenatureerd wordt door de verhitting.
Wij mensen en ook het vee met eenzelfde
kolomverteringssysteem kunnen veel minder mineralen opnemen omdat het antinutriënt
fytinezuur niet meer kan omgezet worden tot gezonde vitaminen en eiwitten. Die mineralen
komen dan in de uitwerpselen terecht en na analyses zien de bureaucraten het te hoge
gehalte aan fosfaten op de akkers en in het grondwater. In plaats van dit ongemak
veroorzaakt door de vuurmolen bij de bron aan te pakken hebben de boeren heden een groot
probleem het mestoverschot.
Onze bevolking heeft last van het
antinutrënt fytinezuur en de boeren hebben een mestoverschot, de bureaucraten hebben werk
en wat doet de industrie Betere en grotere hamermolens vervaardigen tot groot
ongemak van de bevolking. Misschien heeft een grote farmareus de oplossing al lang
gevonden maar kan ze ons niet redden door de terughoudendheid van de Europese wetgeving
die dicteert dat er geen GMO in de voeding van mens en dier mogen gestopt worden.
Toevoeging van fytase is nochtans onze enige redding, het is een doekje voor het bloeden,
maar ons laten doodbloeden is nog veel erger.
I created a low carb grain free recipe that
my kids and I enjoy.
Here is the recipe:
1 cup of ground dessicated coconut
1/4 ground golden flax meal
5 pastured organic eggs
1/4 cup of coconut oil
1/4 teaspoon of baking soda
1/4 teaspoon of salt
2 drops of non bitter stevia
Preheat oven to 350 degrees. Mix together
coconut, flax, salt and baking soda. Mix well enough so most of the lumps are gone. Add
wet ingredients (eggs, stevia, coconut oil). Mix well again. Place batter in a buttered
pan. Bake for 30-35 minutes until knife comes out clean.

vergroot de kans erop. Marios Hadjivassiliou, verbonden als neuroloog aan het Royal
Hallamshire Hospital in Sheffield vond bij patiënten met neurologisch
disfunctioneren zonder aanwijsbare oorzaak bij meer dan de helft van hen
antilichamen tegen gliadine in het bloed. Opmerkelijk was verder nog dat de meesten totaal
geen ingewandsklachten hadden.

Elementary school students will eat more whole grains when healthier bread products are
gradually introduced into their school lunches, a new University of Minnesota study shows.
Whole grain breads are strongly recommended as part of a healthy diet, but children and
pre-teens won't always eat them. For this study, researchers from the university's
department of food science and nutrition monitored how much bread students threw away, and
whether that amount increased as the percentage of whole-grain flour in the bread and
rolls was gradually increased.

after officials found high levels of a toxin in wheat samples from parts of the state.
This toxin could prove harmful to humans if ingested.
Vomitoxin, also known as deoxynivalenol (DON), is a type B trichothecene, an
epoxy-sesquiterpeneoid. This mycotoxin occurs predominantly in grains such as wheat,
barley, oats, rye, and maize, and less often in rice, sorghum, and triticale. The
occurrence of deoxynivalenol is associated primarily with Fusarium graminearum (Gibberella
zeae) and F. culmorum, both of which are important plant pathogens which cause Fusarium
head blight in wheat and Gibberella ear rot in maize. A direct relationship between the
incidence of Fusarium head blight and contamination of wheat with deoxynivalenol has been
established. The incidence of Fusarium head blight is strongly associated with moisture at
the time of flowering (anthesis), and the timing of rainfall, rather than the amount, is
the most critical factor. Vomitoxin belongs to a class of mycotoxins (tricothecenes) which
are strong protein inhibitors. Inhibition of protein synthesis following exposure to
vomitoxin causes the brain to increase its uptake of the amino acid tryptophan and, in
turn, its synthesis of serotonin.
